Baked Squash and Corn Chowder


  • 3 small yellow squash, sliced into 1/8 inch thickness
  • 1/4 cup chopped onion
  • 1 cup chopped smoked ham
  • 1 cup shredded cheddar cheese
  • Homemade Gourmet® Creamy Corn Chowder Soup Mix
  • 1 (15-ounce) can of cream style corn
  • 6 thin slices of cheddar cheese


  1. Preheat oven to 350. Layer squash in bottom of a greased 13x9x2 baking dish. Cover squash with onion, ham, and shredded cheese.
  2. In a bowl, combine soup mix with corn, pour over the top of squash mixture and cover with sliced cheese.
  3. Cover and bake 45 minutes or until squash is fork tender.
  4. Server as you would a soup. This will not be thick enough to serve like a casserole.
