Baked Sweet Potatoes

Ingredients

  • 4 medium sweet potatoes, washed
  • 6 tablespoons Homemade Gourmet® Spiced Dip Mix
  • 1 stick butter or margarine

Directions

  1. Preheat oven to 350 degrees. Place potatoes on lightly greased 11 x17x1 baking sheet; bake 1 hour or until tender.
  2. Let potatoes stand 15 minutes or until cool enough to handle. Cut in half lengthwise; gently scoop out potato pulp into a large bowl leaving ½” thick shell.
  3. Add spiced dip mix and butter; mash. Fill each potato shell with mixture.
  4. Serve warm.

 

Microwave Option

  1. Pierce each potato twice with a fork so excess steam can escape while cooking. Microwave potatoes on high for 5 to 10 minutes or until tender; turn potatoes over halfway through cooking. Let stand 5 minutes or until cool enough to handle.
  2. Cut in half lengthwise; gently scoop out potato pulp into a large bowl leaving ½” thick shell.
  3. Add spiced dip mix and butter; mash. Fill each potato shell with mixture. Serve warm.
