Bay Scallop Scampi


  • 2 tablespoons Homemade Gourmet® Garlic Lemon Seasoning
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 9 ounce package frozen bay scallops, thawed, patted dry
  • 1 (9-ounce) package frozen sugar snap peas, prepared according to package directions and drained
  • 1 tablespoon lemon juice
  • 8 ounce container of grape tomatoes, halved
  • 4 cups instant rice, prepared


  1. In large nonstick skillet, heat oil over medium heat and sauté garlic until golden brown.
  2. Add scallops, peas, seasoning, lemon juice, and tomatoes.
  3. Stir-fry for 2 minutes until scallops are opaque; do not overcook.
  4. Serve over rice.
