BBQ Black Bean Salsa Western Quesadilla

Ingredients

  • 1 (2.25-ounce) can of sliced black olives, drained
  • ¼ cup water
  • 1 large ripe avocado peeled & diced
  • 2 (10-ounce) cans of diced tomatoes with chilies, undrained
  • 1 Homemade Gourmet® Black Bean Salsa Mix
  • ¾ cup barbeque sauce
  • 24 flour tortillas
  • 12 slices provolone cheese

Directions

  1. In large bowl, combine olives, water, avocado, tomatoes, salsa mix, and barbeque sauce.  (Beans must be covered in liquid to rehydrate.)  Cover bowl and chill at least 2 hours.
  2. Spread salsa mixture on a tortilla to within ½ inch of edge. Place a slice of cheese over salsa mixture and top with 2nd tortilla.  Repeat with remaining tortillas, salsa mixture and cheese.
  3. Spray an 8-inch skillet with the cooking spray and heat over medium-high heat for 1 minute. Add the quesadilla and cook for 5 minutes or until lightly browned on both sides and the filling is hot.
