Black Bean Citrus Salad

Ingredients

  • 1 (24-ounce) jar of refrigerated citrus salad mixture, drain and reserve
  • 1 Homemade Gourmet® Black Bean Salsa Mix
  • ½ cup water
  • 1 ripe avocado, diced
  • ½ cup chopped fresh cilantro, optional
  • 1/3 cup Southwest Vinaigrette (recipe below)
  • ½ small red onion, cut into strips

Directions

  1. In large bowl, combine reserved citrus juice with salsa mix.  (Beans must be covered in liquid to rehydrate.) Cover bowl and chill at least 2 hours.
  2. Toss remaining ingredients together with chilled salsa and serve immediately.

Southwest Vinaigrette

Ingredients

  • 1 cup vegetable oil
  • ½ cup white wine vinegar
  • 2 teaspoons Homemade Gourmet Southwest Seasoning
  • ½ cup honey

Directions

  1. Whisk all ingredients briskly until well blended and pour over salad.
  2. Vinaigrette can be stored in refrigerator up to two months.
