Black Bean Salsa Cups


  • 1 Homemade Gourmet® Black Bean Salsa Mix
  • 1 (2.25-ounce) can sliced black olives, undrained *
  • ¼ cup water
  • 1 large, ripe avocado, peeled and diced
  • 2 (10-ounce) cans diced tomatoes with chilies, undrained
  • 36 wonton skins
  • ¼ cup sour cream
  • ¼ cup chopped fresh cilantro


  1. In large bowl, combine salsa mix with olives, water, avocado, and diced tomatoes.  (Beans must be covered in liquid to rehydrate.) Cover bowl and chill at least 2 hours.
  2. Preheat oven to 350 degrees.
  3. Gently fit 1 wonton skin in 36 muffin cups, pressing against bottom and sides. Bake 8 to 10 minutes or until light golden brown. Remove from pan and cool.
  4. Spoon salsa into wonton cups. Top with sour cream and garnish with cilantro.
