Black Bean Salsa Lettuce Wraps


  • 1 Homemade Gourmet® Black Bean Salsa Mix
  • 1 (2.25-ounce) can sliced black olives, undrained
  • ¼ cup water
  • 1 large, ripe avocado, peeled and diced
  • 2 (10-ounce) cans diced tomatoes with chilies, undrained
  • 12 lettuce leaves
  • Cooked chicken, ham, shrimp or turkey,optional


  1. In large bowl, combine salsa mix with olives, water, avocado, and diced tomatoes.  (Beans must be covered in liquid to rehydrate.) Cover bowl and chill at least 2 hours.
  2. When ready to serve, spoon salsa and meat of choice into lettuce leaves, roll up and enjoy.
