Black Bean Salsa Salad


  • 1 Homemade Gourmet® Black Bean Salsa Mix
  • 1 (2.25-ounce) can sliced black olives, undrained*
  • ¼ cup water 
  • 1 large, ripe avocado, peeled and diced
  • 2 (10-ounce) cans diced tomatoes with chilies, undrained
  • 1 (16-ounce) package of salad greens of choice
  • 1 avocado, diced
  • 1 cup grape or cherry tomatoes, quartered
  • ½ cup chopped red onion
  • 2 tablespoons fresh cilantro, chopped
  •  hot pepper sauce (optional)
  •  lime wedges for garnish
  • ½ cup ranch, Caesar, or your favorite dressing


  1. In large bowl, combine salsa mix with olives, water, avocado, and diced tomatoes. (Beans must be covered in liquid to rehydrate.)  Cover bowl and chill at least 2 hours.
  2. When ready to serve, in a large bowl, combine salsa with salad greens, avocado, tomatoes, red onion, and cilantro.
  3. Serve salad with favorite dressing and dash of hot pepper sauce (if desired). Garnish with lime wedges.

 NOTE: If you omit olives, add ⅓ to ½ cup water.
