Black Bean Salsa Shrimp Salad


  • 1 Homemade Gourmet® Black Bean Salsa Mix
  • 1 (2.25 ounce) can of sliced black olives, undrained
  • ¼ cup water
  • 1 avocado, chopped
  • 2 (10-ounce cans) of diced tomatoes with green chilies, undrained
  • ½ cup sliced green onions
  • ¼ cup lime juice
  • 1 (12-ounce) package small shrimp, cooked, peeled, deveined and tail-off


  1. In large bowl, combine all ingredients except shrimp.  (Beans must be covered in liquid to rehydrate.) Cover bowl and chill at least 2 hours.
  2. When beans are completely re-hydrated, add shrimp and chill again for an additional hour.
  3. Serve cold as salad or serve as a dip with your choice of chips.
