Black Bean Soup


  • 1 Homemade Gourmet® Black Bean Salsa Mix
  • 1 (2.25-ounce) can sliced black olives, undrained
  • ¼ cup water
  • 1 large, ripe avocado, peeled and diced
  • 2 (10-ounce) cans diced tomatoes with chilies, undrained
  • ¾ cup celery; chopped
  • 1 medium onion; chopped
  • 3 tablespoons garlic powder
  • 1 tablespoon vegetable oil
  • 3 (14-ounce) cans of chicken broth
  • 1 cup chicken, cooked
  • 1 cup rice, cooked
  • 1 tablespoon lime juice
  • 1 teaspoon cumin


  1. In large bowl, combine salsa mix with olives, water, avocado, and diced tomatoes.  (Beans must be covered in liquid to rehydrate.) Cover bowl and chill at least 2 hours.
  2. When ready to serve, sauté celery and onion in large stock pan with garlic powder and oil until vegetables are tender.
  3. Stir in remaining ingredients and prepared Black Bean Salsa; heat thoroughly.
