Black Beans with Rice and Mango


  • 1 tablespoon oil
  • ¾ cup onion, chopped fine
  • ½ cup green bell pepper, chopped fine
  • 1 (14.5 ounce) can diced tomatoes
  • 1 Homemade Gourmet® Black Bean Salsa Mix
  • 1 teaspoon garlic powder
  • 2 cups water
  • 3 tablespoon of vinegar
  • ½ teaspoon hot pepper sauce
  • 2 cups rice, prepared
  • mango sliced and grilled
  • lime wedges


  1. In large skillet; heat oil and sauté onions and peppers until tender.
  2. Stir in tomatoes, salsa mix, garlic powder and water. Let simmer for 10 or 15 minutes, long enough for the beans to rehydrate.
  3. Add vinegar and pepper sauce. Continue to cook for five minutes.
  4. Serve over rice and top with mango and lime.
