Creamy Artichoke Soup


  • 1 Homemade Gourmet® Baked Potato Soup Mix
  • 4 cups water
  • 1 cup whipping cream or half and half
  • 2 tablespoons butter or margarine
  • 1(15-ounce) jar artichoke hearts
  • 2 cups fresh spinach, julienned, optional


  1. Place all ingredients, except artichoke hearts, into a large soup pot over medium high heat.
  2. In a food processor or blender. Puree artichoke hearts. Add artichoke hearts to soup and bring to a boil.
  3. Turn to low heat and simmer for 5 minutes.
