Fresh and Fruity Tarts


  • 1 Homemade Gourmet® Cheesecake Mix (Basic, Cool Lemonade or Key Lime)
  • 2 (8-ounce) packages cream cheese, softened
  • 1 (8-ounce) container whipped topping, thawed and divided
  • ¼ cup raspberry preserves or jam
  • 12 mini pie shells, prepared according to package instructions
  • Fresh fruit of choice for garnish


  1. In a bowl, beat together cheesecake mix and cream cheese until smooth and creamy. Stir in 4 ounces whipped topping.
  2. Spread 1 teaspoon raspberry preserves or jam in each prepared mini pie shell. Fill each with ¼ cup cheesecake mixture. Top with remaining whipped topping.
  3. Garnish with your choice of fresh fruit. Serve immediately or refrigerate.
