Grilled Stuffed Zucchini


  • 4 medium zucchinis
  • 1 slice white bread, torn into small pieces
  • 5 tablespoons Homemade Gourmet® BLT Seasoning
  • 2 tablespoons minced black olives
  • 1 (4-ounce) can diced green chilies
  • 1/2 cup minced onion
  • 1/2 cup chopped tomato
  • 1/2 cup low sodium shredded Cheddar cheese
  • 1 cup shredded cooked chicken


  1. Prepare the grill for indirect heat. Place the zucchini in a pot with enough water to cover. Bring to a boil and cook for 5 minutes. Drain, cool, and cut in half lengthwise. Scoop out the pulp to about 1/4 from the skin. Chop pulp.
  2. In a bowl, mix the zucchini, bread pieces, seasoning, olives, chilies, onion, tomato, cheese, and chicken.
  3. Stuff the zucchini halves with the zucchini mixture. Seal each stuffed half in aluminum foil.
  4. Place foil packets on the prepared grill over indirect heat. Cook 15 to 20 minutes, or until tender.
