Mexican Beefy Mac-N-Cheese


  • 2½ cups Homemade Gourmet® Chicken Enchilada Seasoned Beef (see recipe)
  • 1 (16-ounce) package rotini pasta, cooked and drained
  • 2 (2.25-ounce) cans sliced black olives, drained
  • 1 (14.5–ounce) can unsalted diced tomatoes, undrained
  • 1 (4-ounce) can green chilies, undrained
  • 1 (8-ounce) package low sodium shredded Mexican-style cheddar


  1. In a large nonstick over medium-high heat, combine seasoned beef, pasta, olives, tomatoes, green chilies, and cheese.
  2. Stir and cook until thoroughly heated. Serve immediately
