Mexican Shepherd’s Pie



  1. Preheat oven to 350 degrees. Lightly spray a 13x9x2 baking dish with cooking spray and set aside.
  2. In a non-stick skillet over medium heat, cook meat with seasoning until meat crumbles and is no longer pink; drain. Spread seasoned meat in prepared baking dish.
  3. Cover with prepared Black Bean Salsa and top with prepared Mom’s Smashed Potatoes.
  4. Bake 30 minutes or until potatoes begin to brown around the edges. Remove casserole from oven and sprinkle cheese on top. Return to oven and bake 5 minutes or until cheese has melted.
