Potato Omelet


  • 1 Homemade Gourmet® Mom’s Smashed Potatoes Mix
  • ½ stick butter
  • 1½ cups milk
  • 1 cup water
  • 4 tablespoons Homemade Gourmet® BLT Seasoning
  • 2 eggs
  • 1 cup shredded cheddar cheese, divided
  • Salt and pepper to taste
  • Sour cream, optional


  1. Preheat oven to 325 degrees.
  2. In a large mixing bowl, combine smashed potatoes mix with butter, milk, water and seasoning; stir until well blended.
  3. Add eggs, half the cheese and salt and pepper to taste; blend together using an electric hand mixer.  Scoop into a greased deep pie plate.
  4. Bake 45 minutes or until knife inserted in center comes out clean.
  5. Sprinkle top with remaining cheese. Let stand for 10 minutes before cutting into 12 wedges. Serve with sour cream, if desired.
